This is a great and easy
french recipe,
you will need a pressure-cooker
:
Chicken "a la Basquaise"

chicken 1kg
margarine 150g
tomatoes 1kg
onions 100g
bell peppers 250g
rice 250g
2 cloves of garlic
parsley
salt
pepper

Plunge tomatoes in boiling
water. Peel them and cut them.
Deseed the bell peppers.
Chop them coarsely as well
as the onions.
In the pressure-cooker, lightly
brown the chopped onions in 50 g of margarine. Add peeled tomatoes, bell
peppers, crushed garlic, salt and pepper.
Close the pressure-cooker
and let it cook for 15 minutes from the time that the valve whispers.
Clean the pressure-cooker,
you will need it to cook the chicken next.
In a separate pan cook the
vegetables on low heat, uncovered.
Chop the raw chicken in 6
pieces.
Lightly brown it in the
pressure-cooker with margarine 50g.
Add salt and pepper.
Cover and let gently cook
15 minutes from the moment the valve whispers.
When cooking is finished,
put the pieces of chicken in a dish.
Sprinkle the remaining sauce
on the chicken and keep the dish warm.
Instead of the chicken, pour
rice in the pressure-cooker without rinsing it because the remainder of
the chicken's juice will make the rice taste better.
Leave for a while on low
heat with 50 g of margarine.
Add a volume of water equal
to 1 and 1/2 bigger than the rice. Add salt and pepper. Close the
pressure-cooker and let cook 6 minutes from the moment the valve
whispers.
Pour vegetables into a hollow
dish. Lay out the pieces of chicken above. Powder with parsley. Serve
rice separately.
